Onion powder: To keep the dressing ultra-smooth and creamy, I use onion powder which is simply dehydrated onions ground into a fine powder

If youd prefer a smoother dressing, pour the blended vinaigrette through a fine mesh strainer into a jar, pressing gently with the back of a spoon to push everything through

Anchovies stay in the recipe because they add incredible depth and umami (much like in Caesar dressing), but I use just enough to enhance the flavor without any fishiness
