This particular coffee consists solely of red bourbon from Wilton's farm, which underwent a double anaerobic thermal shock process resulting in bright floral flavours and aromas. The beans were ground over multiple days before being incorporated with cocoa butter and sugar, so they could be tempered into decadent chocolate bars. When
